FATHER'S DAY FAVORITE BURGERS AND GRILLING RECIPES

For the sports Dad try... Grilled Bison Burgers:
  1. Preheat grill to 350ºF.
  2. Combine ground bison 2lb with 1 tsp. berbere seasoning until completely incorporated. Roll and flatten into desired burger size and allowing burgers to come to room temperature, about 15 minutes.
  3. Make harissa aioli by blending 1 C. mayonnaise, 2  T. Harissa paste and 1/2 tsp salt together with a whisk. Blend well then add 1 juiced lime and set aside.
  4. Grill bison burgers 4 to 5 minutes per side or until internal temperature reaches 155ºF
  5. Remove from grill and allow burgers to rest at least 10 minutes.
  6. Assemble burger by placing patty on bun or lettuce wrap, then top with harissa aioli and arugula.
For the grilling Dad, who spends his weekends cooking…Excel Fleet Limo want recom'ds a guacamole and roll burger:
  1. Bring grill to mediumhigh heat. (You can also broil, pan sear or use a stove top grill to prepare this recipe.)
  2. Add seasoning and guacamole to ground beef and gently work through meat until guacamole is evenly distributed.
  3. Gently form into ¾ inch thick burgers with a small indentation in the center of each patty.
  4. Cook burgers 35 minutes on first side or until nicely seared. Total cooking time should be 35 minutes on each side or to preference. Add cheese for last 2 minutes of cooking on the second side, just to melt through.
  5. For a fresh and crisp flavor, wrap cooked burger in whole fresh romaine leaves instead of a bun and garish with sliced tomato and toppings of choice.
For the gourmet Dad, who know the difference between feta, and arugula cheese try a Mediterranean lamb burger.
  1. Preheat grill to Medium-high
  2. While grill is heating, combine 1 lb natural ground Lamb, 2 tsp Dijon mustard, 1 tsp dried parsley, 1 tsp oregano, 1 tsp mint, ½ tsp ground cumin, 2 tsp garlic powder mix in large bowl, mix well and form into 4 patties.
  3. Grill burgers, turning once, until well browned and cooked to desired doneness. Remove from grill and set aside.
  4. In another bowl, combine 4 tsp crumbled feta, 1 tbsp olive oil, 1 tbsp lemon juice 6 sundried tomato, 6 kalamata olives, pitted & chopped, Toss to combine.
  5. Lightly grill 4 ciabatta buns, spread 4 T. hummus on buns. Place 1 burger on the bottom half of the bun, add mixed greens and the bun top.
